So today has been semi-productive thus far. I actually went to the gym this morning, which I haven't done in an embarrassingly long amount of time. I did ten minutes on the treadmill, five of them jogging, ten minutes on the stair master, and ten minutes on the elliptical. Nice variety, and in and out! It felt good to be back there. Truthfully I've just been so worn down and/or sick in the past couple of months that the gym has taken a back seat. Sad but true. I'm confident it will cycle back in when the time is right.
After the gym I came home, showered, and got ready to go out. Before leaving I threw together a nice little lunch. My friend at work bought me a multigrain panini from the farmer's market on Wednesday that I'd yet to use, so I cut up half for lunch and broiled it with a slice each of cheddar and Swiss cheese. I also had a side salad with my homemade dressing, and a small bowl of grapes. Simple and satisfying.
I had to drive back to my parents' house this afternoon because as of last night my old car is parked out there. I needed to clean it up and out because someone is going to see it tonight, and hopefully buy it =) It probably took about an hour or so to sort through random items and clean and vacuum. When I was done I ate a TLC Pumpkin Pie Bar before hitting the road again. Now I'm back at home and am waiting for Ryan to get in from work. I actually realized I am starving about ten minutes ago, and not only will it be a little under an hour that Ryan gets home, but we have no idea what we are eating for dinner. Eck! Talk about slacking with homemade meals this week!

Alright, so this has been a busy week for better or worse. On Monday I did drive home my brand new Jetta SE!! That was probably the biggest highlight of the week! There were a lot of late nights, and very little home cooking. I'll share with you highlights of my meals from the week. Lunch Snack I've yet to part with the Goldfish! Dinner It's just a brief overview of what went on. I'm hoping to get back into the swing of things.
I do have the pleasure of being off work today for the holiday weekend. There are some things I need to get done, and then Ryan and I are having a house guest tomorrow so I'll need to start all the cleaning for that. I hope everyone has a safe and fun holiday weekend. Maybe the 4th will actually kick off the start of some summer weather in New York?? I won't hold my breath! After buzzing around the house this morning tidying up and researching car information, I found myself terribly hungry. I decided to dig in on the leftover tortellini from dinner last night. It just seemed to be calling my name. Fortunately, this time around I was able to enjoy it with a nice big salad on the side, topped with my homemade dressing. It's just what I've been craving! After eating all's that photoed, I continued to eat! =) I had more tortellini to finish up the leftovers, and also a slice of Italian bread. So sue me, I ate a vat of carbs in the middle of the day. To be honest, I did feel a little too full after this, and quickly realized I could have done without the second helping of tortellini. But instead of feeling down about it, or beating myself up, I let myself digest for a bit and then did pilates =) Maybe that didn't really do anything to compensate for calorie intake, but it did make me feel better overall, so it did good either way. So about the car. I test drove the Jetta and fell in love with it. Tomorrow Ryan and I are going back to the dealer that offered us the lowest price to negotiate and pan out the details. There's a good chance tomorrow I'll be purchasing a brand new Jetta. Fingers crossed!!! After car shopping, Ryan and I ventured out to Barnes & Noble for a bit...AKA I browsed at the Pier 1 next door while he stayed and carefully decided between graphic novels. =) I didn't find anything worth purchasing though. Then on the way home, because I ate a massive amount of food at lunch and I wasn't looking to eat dinner, we stopped at Cold Stone for dessert. Why not jump right to the good stuff? I got my recent usual; cake batter with marshmallows and M&M's. Delicious as always!! There it is in all its melty goodness. Now it's off to bed for me. I'm excited to see what the morning brings!!
Well...the doctor's visit didn't quite go as planned today. Actually, it didn't go anywhere. I'm being referred to other doctors, again, and the appointments aren't until next week. Give me the strength!! I ate all of the sandwich--deli chicken, Swiss, and mustard on Ezekiel bread, maybe a quarter of the apple, and one baby carrot. I wasn't feeling too hungry. For snack I ate most of the yogurt, topped with crushed pecans. It feels nice to be home. And I am happy it's Friday. I just need to keep reminding myself of all the positives, because I am so down in the dumps!! At least I have a yummy dinner to look forward to...and Ryan is preparing it ;-)
It's completely that snacky time of month, because everytime I eat something the thought of eating more of it sounds very appealing, as does having little snacks to pick on here and there. But despire these urges, I have yet to eat more than breakfast, lunch, and my afternoon snack because I know that I'm not really hungry. And that my friend is a major accomplishment in my book! I am the most boring snack-er ever, I know. I ate some more vanilla Chobani today with walnuts. It's just such a low cal, filling snack, and a great way to get in my second serving of dairy for the day! Stay tuned for a home-cooked dinner. Finally. ;-)
It's been gloom and doom outside all afternoon! Has it literally rained everyday in June?! Thankfully my week off from work is mid-July, and I'm hoping by that point the sun will be shining and I will be on the beach tanning! I've really been on a Goldfish kick these past couple of weeks! Between yesterday and this morning I ran out of yogurt and milk, so during my lunch break I drove over to Stop & Shop to pick some up. I used part of the yogurt for my snack today (maybe a quarter to a third of the container), and also ate some pecans from home. I didn't seem to be as hungry for a snack today as I usually am, but I wanted to eat something so I'm not ravenous come dinner time! I think Ryan somehow convinced me to get dinner out tonight, so we shall see what's on the menu! Hello! I was really eager to eat lunch today--this is going to sound childish--because I bought pizza flavored Goldfish the other day and I packed them as one of my sides! They used to be my absolute favorite flavor of Goldfish when I was a kid. And they still taste just as good as I remember! FYI--I make my salad dressing with: * olive oil * balsamic vinegar * basil * oregano * black pepper * garlic powder (or minced garlic if you have the time!) Simple and delicious! Come snack time I had my vanilla Chobani with crushed pecans. And just recently, I threw myself together a little salad with my homemade dressing and leftover chicken cutlet from Saturday night. I'm definitely still hungry, but I wanted to eat something light because as I mentioned this morning, I am meeting up with some friends in a bit. We are going to a favorite coffee shop place that has delicious desserts. I needed to make sure I have plenty of room to really enjoy one ;-)
I am SO sorry. I knew yesterday I wouldn't be able to post my lunch until I got back from Father's Day festivities, but I had no idea that I wouldn't be getting to blog until after dinner tonight! Over at my parents' house, my mom prepared a nice big dish of lasagna. We also had Italian bread and salad. I'm sorry to say I don't have pictures of the meal or of my own food because I didn't want to get asked any questions about photographing my food. I know. I need to get over that if I'm going to actively pursue this blog, but it relates so heavily to Ed that I'm just not sure how to approach it. Until then, use your imaginations! =) We also had dessert last night that I didn't photograph, but you know what it looks like because it was another slice of my mom's leftover birthday cake. Just as delicious the next day! This morning I was back to my U cereal. I really do enjoy this cereal. I love the flakes and the walnuts and how all the flavors meld together. This morning I devoured it with a banana. Then when I got hungry at work today I was really excited to dig into my lunch. I decided to switch things up a bit and packed leftovers from Saturday night's dinner. I made myself a chicken parmigiana sandwich on a TJ's whole wheat bun, and had a salad on the side with my homemade dressing. It was so good and a nice change of pace. For a sweet ending to my meal, I noshed on two dates. Nature's candy! Per usual, mid afternoon I had my satiating snack of vanilla Chobani, today with a TLC Pumpkin Pie Bar. That snack gave me just the energy I needed to make it through the rest of the work day, and also to do some walking at the mall. I've had this shirt I needed to return by tomorrow, so the mall was next on my list before heading home for the night. Finally, I ended off tonight with some more Saturday leftovers (Sorry, there's just two of us and lots of leftovers. I hate seeing food go to waste!) I heated up some rigatoni with sauce, and also a fried chicken cutlet with sauce. I had a piece of Italian bread on the side with margarine. And now you are all caught up on my eats =) I'm so sorry. I will try to never abandon you again!
All that typing about food has made me full and tired. Good night! It's been a while! This afternoon was a whirlwind of continuing to get the house ready, run errands, get myself ready, and prepare dinner! All in all, I would say our dinner party was quite a success. When my mom and sisters came over I had yellow roses for my mom in an eloquently designed butterfly vase (she loves butterflies) displayed in the middle of the kitchen table. She was happy to learn the vase was part of her gift too! Within thirty minutes or so of everyone arriving we sat down to dinner. I made a big pot of tomato sauce, rigatoni, and chicken parmigiana. I also heated Italian bread with margarine, and had a big salad with homemade dressing. I didn't eat any of the salad because I wanted to save room for dessert. =) Here's my plate: Upon request, dessert was a strawberry shortcake. This is the first time Ryan and I tried the bakery down the block from us, and it was delicious. Good to know if we ever need to entertain again or have someone to visit! My slice: At this point everyone's gone home, and I'm happy to report that the apartment looks almost as clean as it did before everyone left. I tried to clean up as we went tonight, and it really paid off.
Tomorrow is going to be another family-filled day for Father's Day. Family is good, but I feel like I'm going to need a weekend from this weekend come Monday! Hello! I spent a nice afternoon with my family for my younger sister's graduation. My mom has three older sisters, and they all attended. I really enjoy spending time with them and my uncles. The ceremony was emotional, per usual, and very bittersweet. My sister was so happy and excited. I'm so proud of her! She's had so many medical emergencies in the past year, making her graduation that much more special and touching. (See "Environment") After the graduation a quaint reception was held. I snacked on a delicious chocolate chip cookie that was worth every bite! Then after the school's reception, all of my family went to the Sizzler. I opted for a grilled cheese. I ate two of the triangles, and also grubbed off some of my sisters' fries. Childish and delicious. Now I'm back home, and I think I'm going to start tidying up the house in a bit and preparing a list for what's needed for tomorrow. Tomorrow is my mom's birthday and I invited her and my sisters over for dinner. I'm also planning on baking a cake in the morning, so it's going to be a busy day!
