Blame it on me being distracted, I *gasp* forgot to photograph my dinner! I remembered just as Ryan and I were cleaning up, so was still able to take a shot of the leftover meal on the stove.
I cooked up one of our favorite light, healthy meals; chicken teriyaki with broccoli, sugar snap peas, and brown rice.
Now I'm relaxing on the couch drinking some more cranberry juice. Here's to hoping I feel better tomorrow! Have a good night!

For dinner tonight Ryan and I decided to go to Moe's. Moe's is a favorite take-out option of mine because the meal can be made relatively healthy, either by selecting healthy food choices and/or ordering kid-sized portions. It's always so tasty and delicious. Though the tricky thing about Moe's: No matter what I do, I always end up eating a few more...several more...chips than planned. Maybe this is the perfect opportunity to acknowledge what I do, accept it, but actively decide to correct it by portioning out my serving the next time around! Moderation is key.
Tonight's dinner was quick and easy, and I'm sorry but also a repeat. Boyfriend, who I'd now like to introduce to you as Ryan, and I had lots of ravioli leftover from Saturday night that I really wanted to use up rather than throw out. I drizzled some balsamic vinegar over spinach and sugar snap peas as a side, and dinner was made in minutes! I also ate three more pieces of Italian bread. What can I say? It was fresh and warm =)
Boyfriend's family invited us over for dinner again. Right before leaving I threw together a few things to eat as lunch on the way over. I didn't want anything too filling, as I didn't know what time dinner would be. And of that I ate the pretzels, a slice of sharp cheddar cheese, and the baby carrots. It was just enough to keep me full until it was time to eat again. Boyfriend's dad barbecued some chicken, and there was also corn on the cob and baked potatoes. I ate one of the corn on the cobs--sliced off the cob, a baked potato, and a chicken leg and unphotographed chicken breast half. For dessert I ate two of these bakery cookies: Yes, cookies are a trigger food for me, as I discussed in my entry "Triggers" that you can find under the "Ed" category on the right-hand side of my blog. Typically in public I either avoid my trigger foods all together, or I set up a limit on the amount I can eat. Today I told myself that two cookies seemed reasonable. They did just the trick!
It was really very nice to be able to sit our in their yard today and soak up some sun. I'm starting to remember how much more challenging it is to go to work in the warmer weather, when I'd much rather be outdoors enjoying the fresh air! It turns out the friends we were meeting up with tonight can't make it out either. It must just be an off day! Boyfriend and I still plan on going over to the carnival, but I'm not a big ride goer so I feel badly that he won't have his friends there to enjoy them with. As for me, I see some Cold Stone in the future =) Boyfriend cooked us up some delicious tacos tonight. We were doing "Taco Tuesdays" for a while, but our scheduling has moved tacos to other days of the week! In a bit we're going out to Dave and Buster's for the evening. I mentioned yesterday that they have this rum, pineapple, coconut drink that I absolutely love. It's called a "Shizzle." I can't wait to have one or two of those!

Boyfriend and I have plans to hit up Dave and Busters. They make this drink called a "Shizzle" that I tried out one day and absolutely loved. It's primarily made up of rum, pineapple, and coconut. I've been thinking about it all week!
So the quiche for dinner popped out of the oven looking very nice: We filled it with diced red and orange bell peppers, broccoli, and shredded sharp cheddar cheese. I also oven roasted some new potatoes, and served it all alongside some baby spinach. The ketchip is for potato dipping: I also ate about a half serving more of quiche.
Overall boyfriend and I agreed that the quiche is a nice base, and has potential to be created into a more flavorful meal. We're thinking maybe adding some chicken sausage next time, and spicing it up a bit. For a first attempt, I would say good try! Boyfriend set up a wonderful dinner for us tonight; baked tortellini, fresh heated Italian bread with margarine, and some Argentinian red. And here's my serving of Italian bread and tortellini (times two): Okay, really it was times three ;-) It's just so good!
Today boyfriend's parents were kind enough to have us over for a fabulous Memorial Day barbecue. They had quite the spread of food, from appetizers, four different types of meat, multiple macaroni and potato salads, to desserts. Then I ate a half a hot dog, and later on ate another half. I think it was also around this time that I took a couple swigs of boyfriend's beer. Next I had a Swiss cheese burger, half a corn on the cob, and a couple tablespoons of macaroni salad. I really thought I had photographed everything I ate and was disappointed to find in posting my pictures just now that I photographed my plate before putting the macaroni salad on, sorry! Imagine it right where that empty white spot is: Finally, I had put together a stawberry shortcake made with cool whip: Boyfriend's parents really outdid themselves and everything tasted so good.
Now I'm sad to see the long weekend come to an end and the work week starting up again. My next day off is at the end of June! |
