Boyfriend cooked us up some delicious tacos tonight. We were doing "Taco Tuesdays" for a while, but our scheduling has moved tacos to other days of the week!
I had the taco meat cooked with red bell pepper atop a bed of baby spinach, topped with sharp cheddar cheese and salsa on the side. I like to break up the crunchy tortilla shells and use them as scoops to eat the salad and salsa with. It helps to make the food last longer too!
