For dinner tonight we had chicken teriyaki stir fried with broccoli and sugar snap peas, with brown rice. I really enjoy cooking this meal because the rice basically cooks itself, and the stir fry cooks up in minutes.
It's fast, filling, and nutritious. It's one of boyfriend's favorite meals too =)
Tomorrow is Friday, thank goodness! Boyfriend and I have plans to hit up Dave and Busters. They make this drink called a "Shizzle" that I tried out one day and absolutely loved. It's primarily made up of rum, pineapple, and coconut. I've been thinking about it all week!

For breakfast this morning I had a bowl of Optimum Blueberry Cinnamon. I'm trying to use it up so I can get another cereal! It's grown on me a little bit, but it's still not a favorite. On the side I had a small bowl of watermelon from the baby watermelon that I cut up last night. When it came time for lunch I wasn't quite as hungry as usual, but I knew if I waited I might lose the opportunity to photograph it. I toasted up a ww pita and topped it with deli chicken and American cheese. I also had a produce plate filled with apple, grapes, and baby carrots, and an ounce of pretzels. Finally, as a snack I had my usual vanilla Chobani, and topped it with half a TLC Honey Almond Flax bar. I eat Greek yogurt so often as a snack because I find it a great way to get in a dairy serving, and also because it really does the job of filling me up between lunch and dinner.
I think we all can relate to the time between lunch and dinner as being a junk food trap. Having something that really sticks to my stomach like Greek yogurt keeps the cravings at bay. Ed is a constant that exists in my life; it's his strength that's a variable. I still don't understand how he gets so strong at times and so meek at others, but through the years I have been able to pick out certain situations that heighten his presence. I'll loosely refer to these situations as "triggers" for the purpose of conversation, but I want to emphasize loosely, as these are not necessarily direct cause and effect situations. I do not know what directly causes Ed. I do not know that anything directly causes Ed. So the quiche for dinner popped out of the oven looking very nice: We filled it with diced red and orange bell peppers, broccoli, and shredded sharp cheddar cheese. I also oven roasted some new potatoes, and served it all alongside some baby spinach. The ketchip is for potato dipping: I also ate about a half serving more of quiche.
Overall boyfriend and I agreed that the quiche is a nice base, and has potential to be created into a more flavorful meal. We're thinking maybe adding some chicken sausage next time, and spicing it up a bit. For a first attempt, I would say good try! My lunch was exciting today because it involved fresh Italian bread leftover from yesterday's dinner. It's always a little distracting to me when there's a loaf of fresh bread in the house, so I get it off my mind by incorporating it into my meals and not depriving myself of it. A little later on I ate a snack of vanilla Chobani, with half a crushed TLC Honey Almond Flax Bar. Finally, before leaving work I dipped into my "emergency snack" of a TLC Pumpkin Spice Bar. I try to have something extra on hand, like a bar or a piece of fruit, for times like today when my stomach is grumbling. This bar did the trick! Now, as I type this, I am attempting to bake my first quiche for our dinner tonight. I'm a little questionable with how it's going to turn out, but I don't think quite as questionable as boyfriend =)
I woke up this morning quite chilly for this time of year, so I decided to switch things up for breakfast. I reverted to an old breakfast favorite of the cooler months; oatmeal. Here's to it already being hump day!
Boyfriend set up a wonderful dinner for us tonight; baked tortellini, fresh heated Italian bread with margarine, and some Argentinian red. And here's my serving of Italian bread and tortellini (times two): Okay, really it was times three ;-) It's just so good!
Before leaving the office today I ate a small snack of Chobani vanilla yogurt and pecans to tide me over for the appointment I have to go to. I spoke with boyfriend and he's picked baked tortellini for dinner. Can't wait!
Lunch again was a nice little platter of tasty choices. I'm really a fan of eating a little bit of many different things. Tonight after work I have an appointment to go to, so my pictures are going to be a little later in posting than usual. Boyfriend is going to cook up a nice dinner for me to come home to. He's choosing between baked tortellini or ravioi. I wonder which one he'll pick?!
The downside of a three day weekend is getting myself ready for work bright and early on a Tuesday morning after three days of fun! The upside of a three day weekend, aside from the obvious, is that after today there's only three days left to the work week!
